RECIPE

Basic Miso Soup

This is a basic miso soup made with a combination of bonito and kelp dashi. Please try it with various types of miso.

Ingredients

  • Water500ml
  • Kombu(dried kelp)5g
  • Katsuo-bushi(bonito flakes)10g
  • Tofu150g
  • Dried wakame seaweed4g
  • Miso50g

Recipe

  1. Make Dashi (Soup Stock) Heat water and kelp in a pot. Remove the kombu before boiling.
  2. Add Katsuo-bushi once boiling, reduce the heat. Simmer for 3 minutes.
  3. Strain the dashi.
  4. Cut into cubes.
  5. Put Dashi(Soup Stock) in a pot and add tofu and wakame seaweed.
  6. When the ingredients are cooked, Turn off the heat and dissolve miso into the soup.
  7. Simmer gently. Turn off the heat BEFORE boiling.
